Reminiscing Rizal Subject During My College Days

I am a simple senior college student way back year 2002. In our syllabus one of our subject is about  " THE LIFE & WORKS OF RIZAL".
If you are Filipino ofcourse you should know Rizal. He is our National Hero.
My course is BS Hotel and Restaurant Management, why in the world includes Rizal's life in our syllbus as minor subject?
Before, I don't know the significance of this subject. But, by reading several books and watching movies about his life, I get to know him better.
What I want to share with you some funny and worry situation during this semester.
Some of my classmate seems not interested in this subject.
I saw them set on the chair just to have attendance, but their presence is not there.
The good thing that makes us focus is that we have a terror teacher.
You won't believe that some of my classmate repeat this subject twice or thrice.
During our long quiz, questions like how many girls Rizal courted?
Who is his first girlfriend? How many language he can speak? Schools he attended, his first teacher?
Semi Finals is more headache some questions are:
lists down the names of Rizal's fiancee or girlfriend and indicated which country he met those girls.
Anyway, this subject is not about Rizal's being a womanizer.
Because these are  just some of the funny questions I remember during our quiz.

As I said I read several biography of José Protacio Rizal Mercado y Alonso Realonda, written by different author.

I also bought his popular fiction novel sequel books entitled " NOLI ME TANGERE! (TOUCH ME NOT!)"
and "EL FILIBUSTERISMO (THE PRODIGAL)".
This is one of the situation in our room while waiting for our instructor.
One of my classmate approached me and asks if I have an assignment and If I already read the chapters for our long quiz.
Ofcourse! I proudly said. Then he respond... I also read biography of Rizal, I did not find anything there if he was CIRCUMCISE.
What? I'm sorry? Why you want to know, Is it necessary to include that in his biography?
While we continue talking my classmate at the back is tapping my shoulder and asks, girl, is it true that Rizal is not been circumcised?
I ignored him, and go back to the guy who talk non-sense. Okay, what exactly is your point?
He said, do you read  bible? Ofcourse, I'm a pastor's kid, I read bible daily.
Do you know Jesus'  biography? I said,  yes in Matthew and in Luke in the new testament. Why?
Okay my point here is that in in Jesus' biography in Luke 2:21 After eight days had passed, the infant was circumcised and named Jesus, the name given him by the angel before he was conceived in the womb.
You see, in Jesus' biography everything is mention His birth, ministry, death and ofcourse CIRCUMCISION.
So, in my opinion Rizal is not been circumcise, because is not mention in any of his books.
Then everyone in our room laughs. Now I got his point.
Then, the instructor arrived. Okay class, what is this noise?
I can't believe that this guy has the courage to ask the same question to our instructor.
The only answer she gave is that, it never mention in any books. And don't mind if this is not mention.
I'm here to distribute the result of your semi-finals.
Since Most of the students got 2 and 3 grades during the semi-finals, she gave us a challenge.
A challenge to memorize the last poem written by Rizal before he died.
It was entitled "My Last Farewell" a 14 stanzas poem with 5 lines per stanza.
Not just that, we should memorize Spanish Version " Mi Ultimo Adios" not the english version.
If we do so, we will be exempted to final written exam.
Those who can memorize will surely get a above 1.75 grades. She gave us 3 weeks to memorize.
Imagine, she not our only subject, we have research papers. But anyway is our choice memorize.
We have a 1 week out of town field trip. Mosts of us brings the copy of that poem while on tour.
Every student you will hear memorizing inside our dorm.
After our field trip, we went to my classmates house to do our research paper.
Her uncle saw us memorizing what's written on the paper while we  are waiting for other group.
He proudly said, I also memorize that poem wayback in my college days in the University of the Philippines.
My classmate respond, uncle what version did you memorize? He said, English, My Last Farewell.
Oh I see. Ours is Spanish version, my classmate replied.
Oh, you have a terror teacher. I will guess only 10% of the student from your class could memorize that poem.
The time has come for our oral exam as they said.
We are called alphabetically. I'm second on the lists of names.
My firsts classmate who stand on the front is very confident and yes She did it!
Now it's my turn. Please Read the poem below. A poem that melts my heart and give insight how Rizal and other martyrs sacrifice thier lives for freedom of the future generation.

Otros te dan sus vidas sin dudas, sin pesar;
El sitio nada importa, ciprés, laurel o lirio,
Cadalso o campo abierto, combate o cruel martirio,

Y al fin anuncia el día tras lóbrego capuz;

Y al cielo tornen puras, con mi clamor en pos;

Por nuestras pobres madres que gimen su amargura;

Aroma, luz, colores, rumor, canto, gemido,

Dad gracias que descanso del fatigoso día;
Adiós, dulce extranjera, mi amiga, mi alegría,
Adiós, queridos seres, morir es descansar.

José Rizal, 1896
(Modern English translation by Edwin Agustín Lozada) source : Carayanpress.com

And Yes. I did it! no more worries. And yes, only 10% of the student choose to recite the poem.
The following day is a wriiten exam for those who don't recite.
I saw the face of our classmates, they look so worried.
When I asks them, they said that 50% of written exam is to write the whole poem of Rizal's  "Mi Ultimo Adios" at the back of test paper.
Our instructor is a terror indeed!
But wait! AsI reminisce those days, I realized today that in life there is no short cut.
The 90% choose the  easy way, not to memorize and recite. But at the end it's more than hard that they could imagine.
The 10% choose the hard way at first, but at the end it's the right decision to make.
Oh! by the way I got high score on my final grade as promised. Thanks to my teacher. I will not see her again.
By the way, the guy who asks about Rizal's circumcision is already died by cardiac arrests before his wedding 7 years ago.
And the guy on tapped my shoulder, until now he's the only guy I can't forget not because he is cute, but  because of his curiosity to know the answer to Rizal's undocumented issue.

GOD'S ANSWER IS ALWAYS ON TIME

A Spiritual book Corner

It was noontime on the 2nd week of September, when our Tourism Instructor announced an upcoming educational tour. It is a 7-day trip to Manila and Baguio City.

She said that this is a requirement for BS HRM student before graduation. This is part of our Major Subject.

Educational Tour means expenses, and expenses means we need Money. Yeah right?

Deadline of payment amounting to PHP 10,000.00 will be on 1st week of October 2002.

We have a little source of income, just enough for daily meals and school transportation.
How can we produced that amount in 2 weeks?

I remember during those times; my dad’s 14 year- old business went bankrupt.

First, the building where my dad’s business was located are consumed by fire in the middle of night.
According to police report, it was an electric accident to a nearby unit.
So sad, that all his equipment was devoured by fire.

After a few months he started from scratch and found another location.
But then again, it was struck by typhoon and flooded the whole area.

My Dad’s Motto: God is Good all the time, and All the Time God is Good.

And now, in 2 - week time, I need to produce money for my educational tour.
Can you guess where my parents are during those times?
Find a job, looking for side line or loan company?
Nope! You’re wrong. None of the above.

They are on 3-day evangelical church gathering. The main topic of this seminar is about blessing and miracle of God.
I never doubt about my parent’s faith, as they pray, I also pray.
Mark 11:24 says Therefore I tell you, whatever you ask for in prayer, believe that you have received it, and it will be yours.

My dad received a call 2 days before the deadline. It was a call from our former missionary in the U.S.
They are asking our situation, because they heard from national news that a typhoon hit our province.
Before they end their conversation, she gave a money transfer tracking number under my dad’s name.
They said that they sent money 12 days ago and emailed us the tracking number; since they don’t receive any reply, that’s why they called.

Imagine! We are praying for 13 days, but God already answered our prayer on the 2nd day.
By the way during those times, we don’t have personal computer, and it’s hard for us to check email all the time.
For us, we are blessed to have an Alcatel Cell phone.

Did I mention how much money they sent? It’s php 12,000.00 an amount more than what I need!
Indeed! God Is good all the time, in every situation, good or bad He never forsakes us.
His Answer is Always on the right time.

BAKING BONDING WITH MY MOM

Kitchen Essentials
 style=

It was Saturday Morning of July 1995. My Mom & I are preparing mixture of one of her specialty Cake - Tropical Chiffon.
My Mom preheated the oven and set to350°F.
In a separate mixing bowl my mom sifted and mixed together all dry ingredients - All-purpose flour, baking powder, granulated sugar, and salt.
I started  separating eggwhite from egg yolk. I set aside all the egg whites in a bowl of stand up mixer.
My Mom combined together in another mixing bowl all liquid ingredients - vegetable oil, egg yolks, and orange puree.
After mixing, she make a whole in the center of the dry ingredients inside the mixing bowl.
She held the mixing bowl of liquid ingredients. She poured it at the center of dry ingredients and fold it slowly.
I looked at my  mom while she gently folded the batter .
This is how you mix together all the ingredients. As she shown to me.
Just mix to one direction, don’t overmix, she said.
Why? I Asks.
Because, if you overmix, there are lots of air will incorporate, your batter will be stiff, she said.
Instead of cake, it will be called bread. It’s not fluffy anymore, continued my mom.
I listen carefully and put it on my mind all her teaching about basic in baking.
I was about to operate the mixer when electric power turned off.
This is the usual situation every weekends, the city government controls the electric power. They turned off from an hour or two.
As they said, this is to control and to properly distribute power supply to each consumer.
You know, during weekends Filipino sung in karaoke, this is this usual family bonding aside from eating and drinking like a feast.
In my own opinion, the city government control the noise in each village, that’s why the electric power is turned off.
You can find some people in the Philippines that no matter how poor they are or sometimes no food to eat in their plate, but they have karaoke machine inside their house. So ironic, right?
Mom, there’s no electricity. How can I make the meringue? I desperately told my mom.
Meringue is an egg white then put cream of tartar beat it thoroughly when becomes soft peaks (a baking term) you can add caster sugar one at a time.
It was folded gently to a batter, that’s why the cake becomes fluffy.
My Mom smiled and said, get two pieces of fork.
I handed my mom's requests.
My Mom  faced together the two pieces fork and becomes one. And now it looks like an egg beater.
She put a cream of tartar on egg white, then start beating continuously.
I help her and we beat egg whites alternately until becomes soft peaks.
Then she put sugar one at a time.
This one is tiredsome mom. It hurts my wrist, I commented as I continuously beating and mixing the egg whites.
Oopps! Just beat in one direction, Mom told me.
Why? It will be stiff also, I responded as I looked in my mom greasing the 12” x 12” inches baking pan.
My mom replied, no, the air might incorporate in different direction, and your eggs will collapse.
That’s why electric mixer was invented to make life easier for the baker.
If you’re making a decorative icing, manual fork beater is not advised. You cannot make a stiffed meringue, she added.
At last the meringue is done. My mom gently fold it to the batter.
Batter is a liquid mixture of one or more flours made with ground grains or soaked grains that are ground.
Batters are used to prepare various foods. The word batter comes from the old French word battre which means to beat, as many batters require vigorous beating or whisking in their preparation.
After folding, she gently folds it to her prepared baking pan, then she put it to her already preheated oven.
While waiting for the cake to bake, we wash all our baking equipment – mixing bowls, measuring cups, sifter, and spatula.
Then I  asks, mom how can you make Icing when there’s no electric mixer and egg beater? How can you make a cake if there’s no oven?
My Mom told a story… Way back our high schools day, we have a culinary subject, there’s no egg beater nor electricity in the island.
We don’t even have oven. But our instructor is so resourceful. Once a week she taught us different kinds of bread, cakes, cookies, and pastries.
Me having a  big almond shape brown eyes, was very amazed. I'am eager to know how can this be possible.
My mom continued, well for the oven, our instructor requested each of us to bring a huge Manila biscuit can.
They boys in our class was in charge to cut the bottom part of the can. Inside of this can fits an 8” x 8” inches baking pan.
The bottom part has 4 sides, they will cut the 3 sides and leave intact the upper part side.
If the project is about cake, there are 5 members each group. 1 member will do the batter, the 2 will do the meringue mixture, the remaining 2 members will do the icing.
They need to help each other because there’s no electricity and electric mixer.
The boys, after cutting the cans, they will gather woods like a dry branches or stems of tree.
They will have to arrange 4 large stones as size of a large mixing bowl. They light a fire in the center of an arranged stone, just like the boy scout does.
They put the huge biscuit can at the top of the fire, to preheat it, just like the oven.
They will preheat the can if the batter is ready. They will put the baking pan inside the biscuit can and cover it.
They will add charcoal at the top of the can, so that there will be heat from top to bottom.
While waiting for the cake to bake. The group members continuously beat their icing alternately until it becomes stiff and can be used as decorative icing.
By the way caster sugar is for meringue while powdered sugar / icing sugar is for icing.
I imagined the situation on how the students are so excited to see the outcome of their baking project.

The cake in our oven is done. We are preparing for our Family day.
I'm happy that I've heard a little slice of my mom's student life.
